Greek Yogurt, Oat Banana Bread
Banana bread is a fabulous, healthy snack – perfect for the cooler weather of December. The mashy bananas, creamy yogurt, and oats create a wonderful texture without the addition of butter or oil. This creative update is a healthy, delicious, delightful bite.
I have several banana bread recipes in my recipe book – one is from my grandma, dating back over a decade. Even so…this recipe has won over my heart with its updated ingredients and delicious, fragrant qualities.
Banana Bread Recipe
Ingredients:
2 eggs
1/2 c greek yogurt, with added almond butter – or – add 1 T almond butter
2 over-ripe banans, mashed
6 T maple syrup
1 t vanilla extract
3/4 c quick cook oats
1 t baking soda
1/2 t cinnamon
1 1/4 c flour
The Deets:
Oven: 350
Cook time: 35-40 minutes
Lightly beat the eggs. Whisk in yogurt, bananas, maple syrup, and vanilla. Mix until smooth.
Stir in oats, baking soda, and cinnamon. Then, mix in the flour until combined. If you’d like to add in dark chocolate chips, pecans, or dried fruit – fold it in.
Pour mixture into greased 9×5 pan and bake until a toothpick inserted comes out clean. Let cook for 10 minutes before transferring. Voila!
