Taco Tuesday For Two

Taco Tuesday is an American holiday. We worship the taco and for good reason - they’re little, yummy parcels of deliciousness that create a flavor explosion of fireworks in every bite. What’s not to love about flavor explosions bursting on the tongue?

Tacos aren’t traditionally labeled as a healthy food choice. The Vibrance Protocol is about enjoying food, honoring it, creating a healthy and loving relationship with the nourishment that keeps our beautiful temple strong and vibrant. As the Saint said (Charlie’s Angels, 2019): “Look, eating is all about the intention you put into your meal. If you honor the cow, the cheese is going to be good for you.” And those of us who follow the VP couldn’t agree more! The tacos from that sloppy 2 AM drive-thru moment are a very different experience from the tacos paired with Modelo’s you’ll find here in Emma’s Workshop. We don’t believe in limiting or restricting, counting calories, or avoiding cheese. We believe in upleveling and honoring the food so it nourishes our beautiful bodies.

The anatomy of the perfect taco

 

Beef Tacos For Two with an Avocado Crema

1lb ground beef, 90/10

Trader Joe’s taco seasoning packet

1 small onion, diced

3 avocados

Greek yogurt, plain

Garlic powder

3 Limes

Soft + hard shell tacos

White cheddar, best if aged over 12 months

The Deets:

To make the taco meat: heat a bit of olive oil in a skillet until it sizzles (how to know your oil is ready - it sizzles when a drop of water hits it). Saute the onion for a few minutes. Add in the ground beef and half the packet of TJs seasoning. Reduce temp to low-med and add in a few tablespoons of water. Cover and let the meat simmer for 5. Check the meat and simmer for 3-5 more minutes depending on doneness.

To make the avocado crema: add 2 avocados, 3/4 plain greek yogurt cup, 1/2 t garlic powder, 2T lime juice, salt & pepper, option to add in a handful of cilantro. Blend until fully combined.

To make crunchy gordita-style taco shells: heat oven to 350o. Place soft shells on a baking sheet. Layer with shredded white cheddar. Bake until the cheese is just melted, about 2-3 minutes. Press hard shell tacos onto the cheese and bake for another 2 minutes or so.

Toppings Bar: sliced avocado, shredded lettuce, cilantro, shredded cheddar, lime wedges
