Delightful Mixed Berry Oats

A healthier alternative to my previous baked morning oats, with no sugar added.

I’ve adapted my old recipe to become a part of my new morning routines. I still love having something in the fridge that is easily warmed and ready to go with my morning beverage of choice; with a little tweaking this recipe became the perfect option!

Instead of milk, I’ve used unsweetened vanilla almond milk.

INstead of brown sugar, I’ve used coconut sugar. You could also use Golden monk fruit sweetner

A vegan option: instead of using honey, sub with monk fruit maple syrup

Mixed Berry Oats Version 2.0

The ingredients:

Dry Mix:

- 2 c old fashioned oats

- 1 t baking powder

- a few sprinkles of cinnamon

- sea salt

- 1/3 c coconut sugar (*see above notes)

Wet mix:

- 2 c unsweetened vanilla almond milk

- 2 eggs (Or use 2 TBSP flaxseed & 6 TBSP water to create flax eggs)

- 1/2 Tbsp vanilla extract

- 3 tbsp honey (*See above notes)

- 1 1/2 tbsp coconut oil, melted

- Mixed frozen berries - strawberries, blueberries, raspberries, blackberries

- Pecans

THE DEETS:

Oven: 375

Bake time: 35 - 40 minutes

Mix together the dry ingredients. Place some berries on the bottom of the baking dish and top with the dry mixture. Mix together the wet ingredients. Pour evenly over the dry mixture. top with the remaining berries and pecans. Bake until the oats have absorbed the liquid and the sides are golden brown. Voila!
