Fresh Coconut Smoothie
During one of my weekly explorations around the local farmer’s market on one sunny (read: wildly hot) Saturday, I came across a local vendor selling coconut water, lattes, and smoothies. I decided to sample the cinnamon, coconut smoothie - made of fresh milk, coconut meat, and very few other ingredients, it was one of the most refreshing smoothies I’ve come across. Perfect for the heat of the valley in mid-July. There was only one slight problem I couldn’t wrap my mind around: it was $15 for one smoothie. Very LA.
With only a few ingredients, how hard could it be to replicate at home? So, I decided to experiment with the ingredients she told me were in the smoothie and add in a few of my own to whip up my own coconut smoothie! *sshhhhh I think mine is even better ;)
Fresh Coconut Smoothie Recipe:
1 Part Coconut Milk to 2 Parts Almond Milk, sweetened (if unsweetened, add a date into the smoothie mix)
1 Frozen Banana
1 T Chia seeds
A sprinkle of cinnamon

The Deets:
I make my own nut milk with my Almond Cow. To make almond or coconut milk: a cup of almonds (soaked for at least 4 hours) or coconut flakes, one date, a sprinkle of salt, and a teaspoon of vanilla extract in 5c water.
I mix the nut milks together in the blender - one part coconut milk to two parts almond milk (meaning: for each cup of coconut milk, I use two cups of almond milk). Add in the banana, chia seeds, ice, and a date, if desiring extra sweetness or if using unsweetened milk. Blend until combined. I like to make 3 or 4 smoothies at a time and have them in the fridge to grab and go.
